Vegetable and Tofu Stir Fry

Ingredients:
2 servings
  • 4 ounces udon or whole-wheat noodles
  • 1 tablespoons canola oil
  • 1 clove garlic, minced
  • 4 ounces flavored baked tofu, (see Tip), cut into matchsticks
  • 1 small red bell pepper, cut into thin strips
  • 1 small yellow bell pepper, cut into thin strips
  • 2 tablespoons reduced-sodium soy sauce
  • 2 tablespoons rice vinegar

Directions:

1.Bring a large pot of water to a boil and cook noodles

2. Heat another pan and add garlic and oil for 30 seconds

3.Add the tofu and cook for two minutes ( it’s always fun to experiment with tofu, try baking it for awhile as well!)

4.Add peppers and cook for two minutes

5.Stir in soy sauce and vinegar

6.Stir in pepper

note: add any extra spices you may want! Sometimes I like to add some red pepper flakes.
